The care and restoration of the countertop surface is relatively easy. The level of difficulty depends upon the type of finish you have chosen. The general rule is that the more resistant the finish, (eg. catalyzed varnish), the easier the maintenance but the more difficult the restoration.
For example, if the varnish is deeply scratched, it is necessary to use a powerful sanding machine and to redo the entire finish, a laborious task. However, if spilled wine sits under the foot of a wine glass on a varnished countertop for several hours, wiping with a damp sponge will remove all traces. A less resistant finish, (eg. mineral oil), will not survive the wine incident unstained, but the finish will be very easy to restore. A simple targeted sanding by hand will remove stains and scratches. A quick reapplication of the oil restores the countertop to its original lustre.
Basic maintenance of all countertops consists of washing with a mild soap solution after each use. From time to time, or immediately after cutting meat directly on the work surface, you should disinfect it (see the sheet entitled Care and Principles of Hygiene)
Sooner or later, either under normal usage or due to an accident such as the spilling of a boiling liquid on the surface, you will need to perform a restoration of your countertop.
